Kalakand or Milk Cake is one of the popular Indian dessert or sweet made by homemade cottage cheese. It is rich in flavor and has a melt in the mouth texture. It generally requires a lot of time and patience to make kalakand recipe in a traditional way. Here I am sharing an easy recipe of Instant Kalakand using ricotta cheese.
You just need two main ingredients. i.e. ricotta cheese and condensed milk. And the best part is you can control the sweetness level as per your choice. Condensed milk gives more richness to this dish. The taste and flavor of this Instant Kalakand are almost the same as that of the original one.
Which Ricotta Cheese to use?
You can use either part-skim or whole milk ricotta for this recipe. But to get the nice texture I would suggest using Whole Milk Ricotta. As we are making this recipe in microwave, the timing can differ as per your microwave setting. You need to cook the ricotta cheese and condensed milk mixture together until you get the granular consistency which exactly we are looking for kalakand. It generally takes me around 30 to 35 minutes to get the right consistency of kalakand.

Instant Kalakand using Ricotta Cheese
This Kalakand (an Indian dessert or sweet) recipe made with ricotta cheese and condensed milk. Easy to make, with just two main ingredients made in the microwave.

- 2 & 1/2 cup Whole Milk Ricotta Chesse
- 1 & 1/2 cup Condensed Milk
- 1/2 teaspoon Cardamom Powder (optional)
- 1/8 teaspoon Nutmeg Powder (optiona)
- a pinch of saffron (optional)
- Ghee for greasing
- Pistachios for garnishing

Take the ricotta cheese and condensed milk in a microwaveable large bowl and mix well. Make sure there are no lumps.

Microwave for 2 minutes. Remove it and mix well using hand whisk or fork. If the mixture is spilling out, cover the bowl with microwave-safe lid.

Again microwave it for 2 minutes. Make sure to stir every time you remove the bowl from the microwave so that cheese doesn't stick to the bottom. For the first few minutes, the mixture will become soft and watery.

Remove from the microwave and mix thoroughly. (Make sure you are using the oven mitts while removing the bowl from the microwave as the bowl gets hot until the last step of this process.)

As you cook more and the moisture content in the mixture gets completely gone, the mixture will slowly thicken. Mix again and microwave for 2 minutes.

It took me around 30 minutes to get the thick and granular consistency. Once you get consistency of kalakand as shown in the picture, add the cardamom powder, nutmeg powder & saffron. Mix well.

Now transfer the prepared kalakand mixture into a ghee coated tray or plate.

Garnish with pistachios or with your favorite nuts. Refrigerate for 1 hour before cutting into your favorite shapes.

Refrigerate for few hours to set. Serve and enjoy!!
- You can add rose syrup or garnish the kalakand with silver or golden vark or with your favorite dry fruits.
- You can adjust the quantity of condensed milk as per your liking.
- Also remember that based on the quantity of mixture and microwave setting, cooking timing can differ. You have to cook it until cheese becomes granular.
- You can also make this recipe on the gas-stove instead of a microwave. But in that case, you have to continuously stir the mixture to avoid burnt bottom.
- You can use sugar instead of condensed milk if you prefer.
